Small-Batch Granola

I enjoy making (and eating) homemade granola every now and then, but most of the recipes I’ve seen make huge quantities!  After searching for and testing many recipes, here’s one that makes just 3 cups and can easily be eaten in several days.  Please feel free to substitute your favorite nuts or dried fruit to make this recipe your own.

Small-Batch Granola – Makes 3 cups

  • 2 cups old-fashioned oats (not quick-cooking)
  • 1/4 tsp ground cinnamon
  • pinch of salt
  • 1/3 cup chopped walnuts
  • 1/3 cup unsweetened shredded coconut
  • 1/2 cup dried cranberries
  • 1/4 cup good quality honey
  • 1/4 cup light olive oil

Preheat the oven to 325 degrees.  In a large bowl, combine oats, cinnamon, salt, nuts, and coconut.  In a liquid measuring cup, measure olive oil and honey together.  Add liquid ingredients to dry ones and stir together.  Bake on a parchment-lined baking sheet 15 to 20 minutes, stirring once.  Granola should be lightly browned.

Allow to cool slightly.  Break granola pieces apart and stir in dried cranberries.  Store at room temperature in an airtight container.

Granola is great as a breakfast cereal, a topping for yogurt or ice cream, or just straight out of the bag as a snack!
